Chocolate Chaga Cookies

Ingredients
- 4 oz unsweetened chocolate, chopped
- 6 Tbsp of butter
- 2 cups dark chocolate chips
- ¼ cup all-purpose flour
- 1/4 cup Medicinal Blends Chaga Powder
- 2 Tbsp cacao or cocoa powder
- ¼ tsp baking powder
- ½ tsp salt
- 3 large eggs
- 1 cup sugar
- 1 ½ tsp vanilla
Instructions
Preheat oven to 350
Melt unsweetened chocolate, butter, and 1 cup of chocolate chips in a saucepan over low heat until melted, stirring occasionally. Let cool.
Stift together flour, Medicinal Blends Chaga Powder, cacao, baking powder & salt.
Beat together eggs, sugar, & vanilla with an electric mixer until pale & frothy. Mix in the melted chocolate mixture & then the flour mix on low speed until combined. Stir in the remaining chips. Chill covered until firm (at least 2 hrs).
With wet hands, roll a heaping tsp of dough into balls. Place on a greased cookie sheet and bake for 10 minutes or until the center is firm. Watch carefully, as they can easily overbake quickly.
Cool on a rack & chill
